Indian Butter Chicken

 I am writing this post on a boat. No, really, I am.
Dad finally broke out the pontoon boat which has been stored in our barn for two years, and I'm now working on my blog in the middle of a beautiful lake, surrounded by flocking geese and lily pads, the sun just beginning to touch the tree-line.
 My younger siblings are perched precariously on the edge of the boat, dipping the tips of their toes in the warm-ish water.
 And I've got a beer in my hand. Could this night get any better??

 But before we wet our lips with our spicy, creamy buttery, chicken sauce, I need to tell you about the magical news I had yesterday...


 Yes, my Hogwarts letter somehow got lost in the mail for ten years, but it finally arrived. McGonagal was most apologetic. Above is a picture of me running into Platform 9 3/4.
No, unfortunately not. But there was a big event at Barnes and Nobles in honor of J. K. Rowling's new play being released, "Harry Potter and the Cursed Child".
 For the most part I just sat reading a book called, "Born to Blog," hoping it would magically make me into an amazing blogger. But my seven-year-old sister, Gracie, dragged me into a Harry Potter Trivia game (During which I whispered mostly-correct-answers in my teammates ears). My team won, of course. Because I'm a huge dork.
  My little brother participated in a quidditch match in the hall, and our friends purchased Butter Beer (Pretty much butterscotch frappes without coffee) from the in-house Starbucks. All in all, it was an incredibly dorky, unmissable experience. I'm not so impressed with the book though...
 I'm already about half-way in and being the big geek I am, I had a hundred expectations for this play which were not met by a long run.
 Oh well. At least I have my butter chicken to comfort me.


 Yes, I know chopsticks are for Asian food. Yes, I know the difference between Asian food and Chinese food.
Interesting India Trivia: In less cultured parts of India, the right hand is used to eat food without utensils, whilst the left hand is reserved for (Now prepare yourself).... whipping the posterior regions of the anatomical being after using the facilities. 

Which is why I opted for chopsticks instead.


Indian Butter Chicken

2 Ibs Chicken
1 Small Golden Onion
2 Cloves Garlic
4 Tablespoons Butter
1 Tablespoon Ginger
2 teaspoons Garam Masala (Blend of spices)
1 teaspoon Turmeric
1 teaspoon Cayenne Pepper
1/4 teaspoon Salt
1 14oz. Can Coconut Milk
1/4 Cup Cream (Extra creamy option)
1 teaspoon Corn Starch

What you will do...

In large frying pan sate chopped onion and garlic with the butter on medium-high.
Chop chicken into bite-sized pieces, trimming the excess fat.
When onion and garlic begins to brown, add chicken and cook until no pink is visible.
In small mixing bowl add spices and corn starch to coconut milk. Add mixture to chicken. Switch to low heat, and cook for 15 minutes.Serve with flat bread and/or rice!


 This is now a staple meal at our home. Two of my all-time best friends, John and Eli, lived in India for a time. Their father (My childhood pastor) is a Lutheran missionary in Sri Lanka. And they love this meal... At least I made it for them once and they said it was great. And they're guys. And that means they're honest about your cooking... Right?
  They actually have had real Indian food, so it must be pretty authentic if they appreciate it. But I don't believe it's QUITE as spicy as real Indian food. And you should be thankful it's not. You have to retrain your entire digestive system to prepare for the combat of eating true Indian food. Or so I'm told.
 But I'm a big wimp when it comes to spicy, so believe me, this is a good spicy. And if you like more of a kick, just add more cayenne pepper. That's where this dish gets most of it's hotness.
  Well, the sun is setting and my dad says it's my last chance for a turn tubing, and I really can't miss this.... Enjoy your butter chicken.
