Yes. But we don't want any old regular store bought ice cream sandwiches. No, that's not how we roll. We strive to impress. We crave something better than a Klondike bar. We want frozen peanut butter. And chewy chocolate.
Oh yes, we do.
Reese's Pieces Ice Cream Sandwiches
Ingredients for Filling:
- 1.5 Quarts (1.41 Liters) Edy's Slow Churned Peanut Butter Cup Ice Cream
- 24 OZ Resee's Pieces Candy
Cookies:
- 1 1/2 Cups Flour
- 3/4 Cup Cocoa Powder
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 3/4 Cup Butter (room temp)
- 3/4 Cup Sugar
- 1 Big Ole' Egg (Not old. Fresh. Just large.)
- 1/4 Cup Milk
- 1 Tablespoon Vanilla
- 1/2 Cup Cooled Strong Coffee

Directions:
In a stand mixer empty the ice cream into the mixing bowl and mix in the Reese's Pieces. Once candy is distributed evenly, pour ice cream into casserole dish and stick back in the freezer. Now preheat the oven to 375 degrees. Beat eggs and sugar till fluffy. Beat in egg and vanilla. Mix in milk and coffee. In separate bowl whisk together the dry ingredients and stir into wet mixture.
Put parchment paper on a cookie sheet and grease. Using your ice cream scoop, fill a little over half way with batter and scoop six per sheet. Bake 7-9 minutes. Freeze. After 20 minutes remove cookies and ice cream from freezer and fill scoop all the way and make them into sandwiches. Freeze those babies for ten minutes and serve!
