My ultimate favorite summer dessert, is strawberry pretzel jello dessert. But my ultimate favorite any-season dessert... Brownies.
Some friends invited us for a cookout this Sunday after church for a grill out. And I ALWAYS make strawberry dessert, so I decided to shake it up a little. I decided to make some simple brownies... topped with strawberry pretzel dessert.
And it turned out better than I had even anticipated. When I was about to take pictures of the dessert, somehow a huge chunk of it fell into my mouth. I don't know how it happened. But after I swallowed all I could say was, "Holy Cow". And I even worked on the recipe and made it EVEN BETTER. Because I accept nothing but perfection.
Strawberry Brownie Cheesecake Pretzel Dessert
1 stick butter
1 1/2 Sugar plus 1/2 C
1 C plus 1/8 Cup Veggie Oil*
3 teaspoons Vanilla
4 Eggs
1 Eggwhite
1 Cup plus 2 Tablespoons flour
1 Cup plus 4 Tablespoons Coco Powder
2 teaspoons Baking Powder
1/2 teaspoon salt
Preheat oven to 350 degrees
Melt Butter in microwave. Stir in sugar and microwave again until it's starts to fluff up. Stir in veggie oil, vanilla, and eggs.
Whisk together dry ingredients separately and add them to the wet.
Grease a 9 by 13. Line with parchment paper. Grease again. Smooth brownies into dish and bake for 30 minutes spread on pretzel layer (Recipe Below), and then bake for an additional 10 minutes, or until toothpick comes out dry with a few crumbs.
Put in fridge or freezer to cool
*Why NOT use olive oil for baking sweets? Because it will make your brownies taste like olives. And nobody wants olive brownies. Trust me.
Pretzel layer:
2 Cups crushed pretzels
1 Stick Butter
1/2 Cup Sugar
Melt butter and combine the three ingredients. After brownies have been in the oven 30 minutes, gently press pretzel mixture onto brownies with spatchula.
Place back in fridge to cool.
Cheesecake Layer:
24 Ounces (3 packages) Cream Cheese (Room temp)
1 Cup plus 1/2 Cup Powdered Sugar
1 Cup Heavy Whipping Cream
Beat whipping cream until soft peaks form. Add 1/2 Cup powdered sugar and beat until stiff peaks form. Set whipped cream aside.
In clean bowl beat cream cheese and 1 Cup powdered sugar, stirring occasionally with spatchula until well combined
Fold together cream cheese mixture and whipped cream
Spred ovver brownies once brownies have cooled.
Refrigerate to continue cooling
Strawberry Layer:
1/2 Cup Sugar
2 T Corn Starch
1/2 Cup Water
1 1/2 Tablespoons Strawberry Jello
1 Quart sliced Strawberries
In medium pot combine sugar, corn starch, and water. Bring to boil. Whisking constantly, boil for 2 minutes then remove from heat
Stir in jello, whisk well and add strawberries
Let cool for about 10 minutes, then slowly pour over cream cheese layer
Refrigerate dessert for 1-2 hours and keep refrigerated until ready to serve.
