Egg and Cheese Stuffed Pancake Cups


 I am definitely a breakfast person. Not a morning person. Just a breakfast person. Definitely not a morning person. I like to eat breakfast at lunch time. So the two don't have to be one. Breakfast without morning. Perfect.



 I'm the type of person who picks a hotel based on their complimentary breakfast. And I take a little bit of everything. Okay, who am I kidding? I take a lot of everything.


 So instead of having to make pancakes, bacon, and cheesy eggs, why not combine them in one sweet and salty, satisfying cup?


 Well there is absolutely no reason why not, so let's do it.


What you will need:

1 Cup (Buttermilk) Pancake Mix
1 Stick Butter (Cold)
5 eggs
Cheese Curds
Maple Flavored Bacon (a couple pieces)

What you will do:

Press butter into pancake mix with a fork until butter is in tiny chunks.
Add water to mix
Press mixture into well-greased cupcake tin
Beat eggs together
Place a cheese curd in each crust
Pour egg into each, almost filling all the way
Lay a square of bacon over each
Bake about ten minutes, or until middle is firm to the touch and doesn't bounce back
Serve with maple syrup and orange juice! 


 I don't know if this is your thing, or if you're some kind of weird alien being who doesn't like breakfast. But I'm just assuming breakfast is your thing. I mean... It's got a chunk of bacon on it!


 And that maple bacon is a perfect combo to maple syrup.

Oh yeah, this is my cat, Bauer. He's incredibly annoying. Whenever I'm making delicious food he just follows me around. He doesn't meow or anything. Just sits there with his humongous cross-eyes. That's why he's the king of begging.


 Yeah, he loved these pancake cups. Especially the bacon.
