Lemon Meltaway Cookies

 These are actually a copy-cat recipe I invented based off these delectable lemon sugar cookies that are sold at our local bakery. I've always been ins
ane about these cookies, but in the past few years they've been closed more often and then what?? Like I just wait until they open to get a lemon cookie? No way. 



 The bakery is called "Louie's Bakery". Louie was the loveliest man I've ever met. He died when I was a little kid. I miss him terribly, even though I really didn't know him at all. I just remember he was the biggest sweet-heart ever to open a bakery. He would get down on his knees in the bakery to talk to me at eye level. He teased and joked with us. When he died I remember everyone in town covered the bakery windows with letters to him. I remember this distinctly because I signed my name in yellow (My favorite color) so it didn't show up in the newspaper when they put in a picture of all the letters on the bakery windows.


 Louie's doughnuts have always been the pride and joy of our little town. But nothing beats Grandma's chicken salad on Louie's buttery crust white bread.



  I was actually worried about making this recipe because I felt if I ruined it, I would dishonor Louie. But I didn't ruin it. They are exact taste-alikes. In my mother's words, "Abby, these cookies are divine."



Lemon Meltaway Cookies
What you will need:

Cookies:
2 cups all purpose flour1/2 teaspoon baking powder1/4 teaspoon salt1 cup (2 sticks) butter (Room temp)3/4 cup granulated sugar1 large egg3 teaspoons Lemon Juice

Frosting:
1 Cup Shortening
1/2 Cup (1 Stick) Melted Butter
3 teaspoons Lemon Juice
4 Cups Powdered Sugar
What you will do:

Preheat oven to 350 degrees
In a stand mixer beat sugar and butter until sugar is dissolved
Stir in egg and lemon juice
In a separate bowl whisk together dry ingredients. Add to wet
Line a cookie sheet with parchment paper
Form 3-inch logs of dough and press and form them into ovals (Or you can just make normal sized circles) on cookie sheet
Bake about 10 minutes or until edges begin to brown
Let cool

Melt stick of butter
Beat butter and shortening
Beat in Lemon Juice
Beat in Powdered Sugar 1/2 Cup at a time
If desired, add "Lemon Yellow" food coloring to enhance the overall lemonness
One cookies are cooled place a gob of frosting on each cookie and smooth over with back of spoon
Serve with a tall glass of milk
