Rainbow Bars


 These gooey, delicious, fruity lemon bars are the perfect way to brighten your Monday. As we approach the school year and fall along with it, it's more vital than ever to keep colorful, fun recipes close at hand.





  My favorite part of these bars probably has to be the Ghirardelli white chocolate drizzle. They're great without them too, but the white chocolate is the cherry on top of these colorful squares.


 Not to mention the Funfetti. It just makes everything more.. you know.. Fun.


 Well, I normally have more word content in my posts. I had written a big old post, but my computer decided to quit out of blogger without saving my work. Ugh. And now I'm too mad to rewrite everything.


 So enough words, let's get to the good part.


Rainbow Bars
What you will need...

2 Cups Mini Marshmallows
2 Tablespoons Butter

3 Cups Fruity Pebbles

2 Squares White Baking Chocolate
1 teaspoon Coconut oil
Funfetti Sprinkles 


What you will do:

Grease an 8 by 8 Square pan, set aside
In a microwave safe bowl, warm marshmallows and butter for ten seconds at a time. Stir each time until melted
Mix in cereal and press into pan
Put bars in freezer or fridge
Melt white chocolate in microwave stirring every 10-20 seconds (If it's having trouble melting you can add more coconut oil)
Drizzle white chocolate onto bars, sprinkle with funfetti sprinkles
